2 oz Oregon Spirit Distillers Wheat Whiskey
Meadowland Signature simple syrup
¾ oz beet syrup
¾ oz lemon juice
Add ingredients over ice and stir to dilution. Fill collins glass with crushed ice, and strain. Garnish with thyme sprig and serve.
To make the beet syrup, juice 3 large beets. Bring the juice to a simmer on the stovetop. Continue to simmer for 20 minutes. Turn off heat and allow to cool. Store in refrigerated jar or bottle.
